Abstract

This book contains a collection of articles on recent issues surrounding It is arranged around four major themes: consumers, institutions, competition and management. This chapter considers social representations of healthy eating. It contains the results of a survey conducted by CREDOC, amongst a sample of 2,000 French persons, aged over 18 which investiagted responses to questions surrounding what consititutes eating well. The survey was conductted in Spring 1990.
